Cooper's Old Time Pit Bar-B-Que, Best of the Best

A visit to Cooper's BBQ is a worth-while trip. The first thing you will notice as you drive in, is the smoke from the five steel BBQ pits out front.

Doctored KC Style

Taste, taste, taste. That's the measure of what makes BBQ sauce great. Most Kansas City styles of BBQ sauce are just a little bit too sweet for me.

BBQ, what it is

BBQ Done Right is Grilling

First of all, I don't have the time to spend hours with BBQ using the smoking process. I know I may be flying in the face of tradition, but...

What Is This Chimney Starter Thing? And Do I Have To Use One?

If you are one of those chimney starter pros and use one all the time, you may just want to keep on browsing. But if you have never heard of one, or are just curious, it has to do with charcoal and grilling.

What Is This Chimney Starter Thing? And Do I Have To Use One?

Editor's Qs

I don't have an instant read thermometer. How can I tell when a piece of steak is done without cutting into it?

Although an instant read thermometer is the safest, most accurate way to check the internal temperature of steak... there is another way.

Touch!

Even when I have a thermometer, sometimes I'll use touch because it's so quick and easy. Of course if you are wrong, you can always put it back on the grill. Besides, the more you do it, the better you get at it.

Here is the way I look at it. You need something to go by, so you will know what to expect. In other words, before you touch a steak, and know that it's cooked medium and ready to come off the grill, you need to know what a medium steak should feel like.

Here's what I have come up with that seems to works for me.

What should a rare steak feel like?
Touch the center of your cheek with your index finger.

What should a medium steak feel like?
Touch the fleshy part of the back of your hand between your thumb and forefinger.

What should a well done steak feel like?
Touch your forehead with your forefinger.

You know how I said that you get better with practice? I think you actually build a sense of pride in yourself, by being able to cook a steak perfectly, without using a thermometer. Not everybody can do that.

The Challenge Continues.

I don't want to give you the idea that I can't be stumped, but... let's see what happens.
