We own a BBQ food truck and started serving pork tacos. I have had a few people ask about a sauce for them, not BBQ sauce. Do you have any suggestions? I put smoked pork, cheese, pico and coleslaw on them. Any suggestions would b appreciated. Thank you

Thank you for the question, Rick.

My first thought is a vinegar based sauce like they use on pulled pork sandwiches. I know that it's a BBQ sauce, but it can be as simple as vinegar, apple juice, and spices. If you haven't already read it, there is more information about vinegar based sauces on my website.

Another possibility would be to use sauces like you would normally associate with tacos. Sauces like salsa, picante, enchilada sauce, mole, tomatillo, or other hot sauce. That would be something you could use either in addition to your pico de gallo or as an alternative.

If neither of those options seems right, come up with some kind of combination. You could either have a vinegar based sauce with flavorings of salsa or tomatillo... or maybe a mole sauce (or your favorite hot sauce) with some vinegar and other spices.

I don't have any magical sauce to tell you about, but maybe this will give you some possibilities to pursue. Good luck and here's hoping you come up with an original killer sauce.
